Things you have to keep in mind are grind size (whether the grind is too coarse or too fine), the water (how much or little water to use or what minerals are in the water), and the brew time (brewing too long will yield bitter tastes and brewing too fast can result in sour and light tasting coffee). Brewing coffee perfectly is hard to do but once you’ve mastered it, then it comes as second nature, but now add another variable into the mix, serving events, and things get complicated again. Treating catering like a coffee shop will result in service that takes far too long, but serving fast without standards will get you back to where we started where the coffee will taste terrible. That is why creating efficient serving standards while keeping coffee quality high is the goal of any coffee caterer.
